Ahhhh, soup
It is trying really hard to be soup weather outside. It’s overcast and gloomy but it’s just not quite cold yet. Still, I had a rough time this week so I decided it was time for one of my favorite comforts soups. Garlic, carrots, celery, cilantro, Italian sausage, tomato paste, balsamic vinegar and assorted seasonings.

I made a Thai inspired soup last night - spicy! but yummy.

I kinda just made this recipe up - it probably needs about 3/4 the amount of lentils as I put in, because it ends up being mostly lentil and not a whole lot of broth:
Let’s see . . .
1 lb. mild or spicy italian sausage, your choice
1lb sack of french lentils
1 8oz. can tomato paste/tomato sauce - I used sauce this time
2 large carrots, sliced thin or minced
2 celery stalks, sliced thin or minced
big heapin’ tablespoon of minced garlic
3 32oz. cartons of chicken broth (I use Swanson’s)
1 bunch cilantro, chopped
salt
pepper
balsamic vinegar
olive oil
cayenne pepper
Okay. Bust out a big soup pot and a frying pan. Sautee the garlic in
a little olive oil and then add two of the cartons of chicken broth
and the tomato sauce. Keep the third one in reserve to add more
liquid if you need it later, as the lentils expand. Bring to a boil
and add the lentils. Reduce heat to a rapid simmer and cook for about
ten minutes. Check the flavor of the broth and season it to taste
with a couple tablespoons of balsamic vinegar, salt, pepper and
cayenne. Add the carrots and celery. Continue simmering for another
20 minutes.
While that’s cooking, brown the sausage in the frying pan, drain the
fat, and add it to the soup.
With five minutes remaining, add the cilantro.
Serve with crusty bread.

Seriously, this looks killer. I’ll have to share with the husband, who is rather the Soup King (at least in these non-soup-worthy parts).

What is this soup called, I mean aside from “soup”. David’s Surprise? Kilty Comfort Soup? Knitter’s Delight? Man In Kilt (I figure this because its hot, makes you warm and wet [if you spill] and has sausage)?
